I simply modify the muffin recipe that's in the BTVC book. Use walnuts or pecans as they are easier to digest. If I use 3 cups of nuts and leave in the blender for a couple of minutes, then add some olive oil and blend again, they become nut butter. Then add what you like as vegee or fruit. I like bananas, apple sauce, or blueberries. I put in 5 eggs. This will yield 24 muffins. Fill them only half full as they really expand when cooked.
