Is it necessary to incubate the yogurt for 24hrs for someone that is NOT on the

BTVC diet? If not, how long would you suggest it be incubated? Does the yogurt

produce more good bacteria the longer it is incubated?

I guess not...

Typical directions put the fermentation time at around 4 hours.

Yes. Any reason why you wouldn't go longer?

I would prefer to incubate for a shorter period, i.e. 4 hours, so that it could

be ready faster. However, if a longer incubation period yields more probiotics,

then I would rather incubate it 24 hrs.

Sometimes I don't have more milk on hand to make more yogurt, so my wife misses

her yogurt for a day or so.
