Well, prosciutto with salt and pork is ham, and legal.

Also, find a salt cured ham. It can take days to properly soak and cook

the darn thing, but I've had one (neighbor of the person who put us up

after Hurricane Katrina prepared it) and it was MAGNIFICENT!

There are companies that salt-cure rather than sugar-cure

some of their hams. Look on the Internet (Google “salt cured ham”) and contact one

or more of the companies that come up.

I used to order stuff from Burger’s Smokehouse. I just talked to

them; I’d love some ham too. They were insistent that their “city ham” is not

cured with sugar. But I don’t have it in writing! (And their ham is expensive.)
