Guest guest Posted March 23, 2009 Report Share Posted March 23, 2009 Marilyn, I have absolutely no idea. I found this though Pinto beans 34 percent starch 21 percent protein. Black beans 45 percent starch and 21 percent protein. But we are allowed to have black beans of course when we are healed. Also in my first email it says that kidney beans are the worst for your stomach. But again we are not allowed the white kidney bean but we are allowed the red kidney bean. Chickpeas I know are high in starch. I had chickpea flour the other day and I felt sick as a dog. "sahmomof9@..." Guest guest Posted March 24, 2009 Report Share Posted March 24, 2009 I read somewhere or other that Elaine felt some kinds of beans/legumes were better tolerated by most people with digestive disorders than others, especially when soaked and cooked longer than usual. All beans/legumes contain polysaccharides, however. So I'm guessing that Elaine felt that the chemical composition of the few beans she allows are the simplest and/or easiest for our compromised digestions to break down. But it also means that due to the chemical composition of the permitted legumes/beans some of us can't tolerate even these few types -- or have to treat them as an advanced food. I'm one of those who can't eat any beans, legal or not, no matter how long I cook them, no matter how long I've been on SCD. Kim M.
