With my upper GI disorders, I had to go through a lot of testing when I first started SCD to find those foods that didn't contain more fat or fiber or seasonings than my upper GI would tolerate. All three aspects to food aggravate my upper GI, so I have to pay attention or I get into a serious upper GI symptom flare. I do not want to have to keep getting a sphincterotomy, so I'm careful to limit my fats, fiber and seasonings. You'll have to do some cautious testing, but I can tell you which things you mention I can't touch: Yogurt is now off-limits. The milk fat too much for my upper GI, plus my immune system started reacting to the casein. Cheese is also off-limits. Terrible upper GI symptoms, then my constipation becomes severe. Can only eat ground bison; no other ground meats are tolerated due to the fat content. I do bake a lean roast beef every few weeks (Eye of the round works best), but I have to trim the fat carefully. I also have to skip a day or two between servings of the beef, or my upper GI reacts. Don't touch pork, no matter the cut or how white the meat. Also can't eat lamb. Can only handle white meat poultry. Haven't yet tried venison or other game meats, but if the meat is dark, I know not to touch it. I can handle fresh or frozen wild-caught salmon which has a fairly high fat content, but only if I eat it in the middle of the day, and pan-fry it. Baking or poaching leaves too much fat. I do eat other white fish, fresh or frozen. I also occasionally eat canned tuna packed in water (and no illegals). I don't like sardines or mackerel, but I think they're fairly high in fat. Coconut oil is out completely, as are most other oils. I can cook with a bit of olive oil, but can't use it as a dressing. Butter is OK, as long as I don't use much, and don't have it every day. I mainly use butter in muffin baking. Nut butters are off-limits too, trigger major upper GI symptoms. Almond flour has to be limited. I can handle a spoon of peanut butter once in a while, but always get nausea. It helps me feel full, and I get cravings for peanut butter (make my own) so I still eat it, just prepare for the nausea. Broths always aggravate my upper GI, so I've had to limit my serving to once a week or less often. Doesn't matter what type of meat bones I use, and how well I skim the fat off -- there is too much fat remaining in the water. My immune system reacts to broths made entirely from veggies, so I have to be careful with this too. Sometimes my immune system responds because my liver and pancreas are faltering. Or so it seems to me. Of course fiber and seasonings also aggravate my upper GI. So I eat bland and plain. You do get used to it [sigh]. Kim M. The enzymes totally help though. I have switched to eating animal protein only once in awhile and I have been feeling better.
