Hi,

I am new here - just wanted to say I have that book "cooking with coconut flour" by bruce fife and while the products are AMAZINGLY DELICIOUS they use a great deal of sugar and the intro of the book talks about not deviating from the recipe and how coconut flour is very different to work with and that has been my experience with it pre-SCD. We need some real SCD coconut recipes!

Just an FYI - I modify some of Elana's Pantry recipes - I substitute

with honey, almond flour, and olive oil, and they usually work out

well. But she is really only a gluten-free baker, so keep that in mind.

Unfortunately, it's up to SCDers to check all the ingredients in a

recipe and in any packaged food, and modify as necessary. I have found

that I have become a much better cook by learning to modify recipes to

my own needs, and it adds some adventure to the process!

FYI about coconut flour - I had trouble with it when I baked with it -

too much fiber (and I don't even have digestive issues) sometimes. But

you can also mix it up with almond flour in some recipes.
