I too can not handle baking soda, so I leave it out of my recipes and everything turns out great.

I cannot ingest baking soda.. it makes me sick.

All of these yummy nutbutter recipes call for baking soda-

what can I substitute this for?

I am also dairy free.

Jodi,

Try separating the eggs, mix the batter, then whip the whites stiff with

a pinch of salt and fold them into the batter. THat should give you

enough leavening that you don't need the baking soda.

Heck, I couple of times, I've forgotten the baking soda on the nut flour

breads and never noticed the difference.

Don't eat too many eggs but it

would be nice to have more of a brownie'ish like consistency with the

pecanbutter I make and bake.

Don't forget to consider duck eggs if chicken eggs are

problematical.
