falls under the 2% rule. you don't know what could be in it as an anti

stick agent. If you have a cuisinart, this only takes a minute or so.

Jill,

I sometimes test the outside of brie or camembert by dropping iodine on the rind

-- I heard that starch can be added to the rind. If the iodine turns

blue/black, there is starch. You might want to try this on your shredded cheese

(do not eat iodine!).

btw, there has never been an indication of starch on any cheese I tested, but

they were not shredded.

The flavor of home-shredded cheese is better than store-bought. You may try it

and wonder how you ever bought that pre-shredded stuff!

It's a pain, but it's the only way to be sure. Cellulose in small

quantities, ie, in a supplement or pill capsule is not an issue normally.

Cellulose in the quantities needed to keep cheese from sticking together

could be.

For convenience, I use an electric shredder, shred around 10 pounds of

cheese at once, then bag it in 4, 8 or 16 ounce bags and stick it in the

freezer. It doesn't stick together that way. And I have the convenience

of being able to reach in an grab a bag the right size for my recipe of

the day.

Not only that, but I only have to clean the shredder once every couple of

months!

Which or what electric shredder do you use, please? Not familiar with that. I've been doing it by hand and it's literally painful as I have tennis elbow!

I have a Maverick #5 grinder, with optional salad/cheese

slicer/shredder.

It appears that it may have been discontinued, though -- I got it

almost 8 years ago. They have the newer model of grinder at the web site

above. I think Jodi got that one, from another site, and likes

it.

http://tinyurl.com/cc4lv2 looks like it might do the same

thing as the shredder/slicer on my grinder. You just won't have it as

part of another gadget. I have no experience with this one,

however.

I really, really like my Maverick, though. I'll ask around and see if

others of my cooking friends can suggest a newer model....

Thanks to all for your suggestions re: store-bought cheese and the

yogourmet yogurt maker.

Someone mentioned that yogurt can reach temps of 115 or even slightly

higher without killing the good bacteria? If so, I may not need to

modify my yogurt making practice!

Hmmm... I think I have a meat grinder attachment for my Kitchenaid electric mixer that I received as a wedding gift that I have never used. When I saw the picture of the Maverick you sent me, it reminded me because they look alike. Do you think that would work? I'm very excited--I'm going to have to try it. Thanks for the info.

Jill,

If you are doing well on your yogurt, then keep doing it in a fashion

which works for you. It's only if you are having trouble that you may

need to re-think things -- like the commercial cheese.

And only change a few variables at a time, or you'll never know which

item it was that was the issue.

SCD? Isn't it like for dough and stuff like that?

I'll look into finding the cheese shredder attachment.

I use my Kitchen Aid mixer all the time, but I keep it in my pantry. It is very heavy, so I enlist the Significant Other to bring it in the kitchen and to put it away. We SCD'ers do need a lot of room for all our gadgets, don't we?

Well, for openers, I understand that a stand mixer can whip egg whites

stiff in about 30 seconds flat.

Since I make a LOT of souffle bread, it would be nice not to have an

aching arm and shoulder from whacking my hand mixer around.

That looks like it should be the one!

I don't have a pantry to keep one in, either! My mid-60s galley type

kitchen has NO room for gadgets, and, between a toaster oven, a

Foreman-type grille, and a Vita-Mix, no counter space, either! The whole

north wall of my den / dining room has become SCD-stuff storage,

including a table for the two Excaliburs!

I'll take a pantry about the size of my current kitchen, and a kitchen

about the size of my family room! My standard comment is that when I win

the lottery (assuming I remember to buy a ticket), I want to build a

library, and a kitchen, with some living space attached!

Hi Jodi,

Just today (busy Friday cooking :)), I have used my Kitchen-Aid to whip eggs for

meringues, almost instantly shred two heads of cauliflower for " caulifried

rice " , and am about to mix up some frosting for peanut butter brownies.

I've only had it since my dd is on SCD, and it's really been a big help!

Hi Ellen,

Thanks for this detailed explaination. It sure does look handy. I have an

immersion blender that I use for mixing. But I see how a Kitchen-Aid can be

super useful.
