Jill, I sometimes test the outside of brie or camembert by dropping iodine on the rind -- I heard that starch can be added to the rind. If the iodine turns blue/black, there is starch. You might want to try this on your shredded cheese (do not eat iodine!). btw, there has never been an indication of starch on any cheese I tested, but they were not shredded. The flavor of home-shredded cheese is better than store-bought. You may try it and wonder how you ever bought that pre-shredded stuff! For convenience, I use an electric shredder, shred around 10 pounds of cheese at once, then bag it in 4, 8 or 16 ounce bags and stick it in the freezer. It doesn't stick together that way. And I have the convenience of being able to reach in an grab a bag the right size for my recipe of the day. They have the newer model of grinder at the web site above. I think Jodi got that one, from another site, and likes it. http://tinyurl.com/cc4lv2 looks like it might do the same thing as the shredder/slicer on my grinder. You just won't have it as part of another gadget. I have no experience with this one, however. I really, really like my Maverick, though. Someone mentioned that yogurt can reach temps of 115 or even slightly higher without killing the good bacteria? If so, I may not need to modify my yogurt making practice! It's only if you are having trouble that you may need to re-think things -- like the commercial cheese. It is very heavy, so I enlist the Significant Other to bring it in the kitchen and to put it away. We SCD'ers do need a lot of room for all our gadgets, don't we? I've only had it since my dd is on SCD, and it's really been a big help!
