Buttermilk is not SDC. If youre trying to replicate buttermilk, maybe use the yogurt with some vinegar. Aged cbeese are good on SCD because they have less lactose present. Cheeses must be aged for at least a month on SCD so no soft " cream " cheeses or feta or mozzarella or ricotta is permitted. As for other cheeses, try one at a time-- and there is a list in the back of the book that says certain ones may be used " freely " start with those.
