Concentrated grape extract isn't legal because there is no way to verify that no SCD illegal ingredients, such as sugar, are contained in that extract. Pectin isn't legal either, other than any contained in the fruit that you would cook to make jam. Your best bet, if you want strawberry jam, is to make your own. Guest guest Posted March 4, 2009 Report Share Posted March 4, 2009 Not that you were asking for a recipe, but we've found it pretty easy to make jam: simmer frozen strawberries on stovetop w. honey to taste. Add gelatin (last time I used a whole packet, but next time will try 1/2 packet b/c my jam is VERY firm!). Refrigerate and it will firm up nicely. Good luck!
