But, I think it's one of things you have to play by ear and try it to see how YOU react. I still can't eat broccoli or cooked spinach but tolerated cauliflower very early?? I have Crohn's and was able to eat them at about 4 months into the diet. I left my house to run an errand and wound up taking too long. They were the only legal thing I could find and I was starving. I tolerated that small bag. They were a nice treat. The best is making nachos. Cook ground meat with onion, garlic, cumin, chili powder, paprika, salt, pepper and jalepenos (or whatever spices you like. just S & P is good too) until ground meat is done. Meanwhile, shred about 1.5 - 2 cups of colby jack cheese and dice an onion and some more jalepenos (if you tolerate them). Arrange a healthy portion of pork rinds in a round cake pan and crush up the big pieces a little. Add diced onion and jalepeno (if using) Add ground meat (if using) Sprink with cheese Cook at 375 until the cheese is bubbly about 15 minutes. AWESOME TREAT!!!! I treat myself about twice a month to pork rinds. If I eat them too much I have some difficulty still. Congrats on your weight!!!! We cook it until it's very crunchy. My daughter (w/Crohn's) has no problem with it and she it's it at parties instead of chips. It's also great in lunches. I'm not sure about when to try the pork rinds. My daughter started eating those after a month and a half. She has to be careful not to eat too many, it can be tough on her stomach. They are nice for parties.
