The problem is, I haven't the energy nor the ingredients to make anything. I haven't been hungry at all today until I read this. I made myself eat a bowl of cereal about 4 this afternoon. Now, it's too late to go to the store, and the only thing I have that I could make quickly is a frozen pizza. It is one of the good, rising crust ones with roasted mushrooms and garlic, but not what I'm wanting right now. How do you make the paneer? And, the spinich recipe sounds great, how do you do that? I love anything with spinich. Oh, and yes, I do love roast beef with Yorkshire pud, I do that for Christmas most years. I don't think I will this year, as I intend to help out at the Salvation Army Christmas dinner, if I think I will be feeling well enough to commit myself to doing it. I am starting to feel better, just a bit, finally. I have been flaring since October, I have NEVER had one last this long. I was beginning to think maybe my fibro had just moved to a new place, and I wouldn't come out of it. Keep your fingers crossed that it really IS going away. I still don't think I could have spent the entire day in the kitchen. It's more knowing all the clean-up I would have to do when I'd done cooking. You deserve a big pat on the back for doing all that. Last week I cooked up a batch of steel-cut oats (porridge), and a batch of apples cooked with cinnamon and raisins. So even during my horrible flare last week, all I had to do was throw a spoonful of cooked oats and apples in a dish and heat it, toss some cottage cheese and brown sugar on it, and I had an excellent breakfast. The author has tried hard to cut down on the fat in the recipes, so of course, wherever she says " traditionally, this is rolled in flour and sauteed in ghee " , that's what I do. Or " traditionally, a cup of cream is added at the end " , guess what I do? ;D I love the cookbook; she's trimmed a lot of the clay pots and traditional methods and adapted the recipes to modern kitchens, and they're surprisingly easy. And fun. Anyway, it's not a really *hard* dish, but definitely takes some time. I made my own paneer (milk cheese) from a recipe that she gives. It's easy; just takes a little time. The spinach (palak) part is just frozen spinach cooked with an onion and some spices, spun in the blender until it's smooth, then cooked for about a half hour with more spices. The paneer (you can use farmer's or goat cheese instead) is added at the end. You can probably find a recipe on line at allrecipes.com, or see if there's an Indian equivalent. It was really yummy with a piece of warm naan (flat bread) with butter. Pita would do. This is what is so amazing about people in this group. As badly as you may be hurting, you still have some compassion and effort for someone who's less fortunate. I had several major surgeries in a relatively short time, and was in a non-stop flare all summer. By end of August, I was pretty frantic, but then I came out of it for a while. I'm trying to keep confidence that as bad as the flares are, they will go away after a few days. > Keep your fingers crossed that it really IS going away. You deserve a big pat on the back for doing all that. I am so glad that I did, because I had meals prepared and didn't have to cook during the flare. It was hard enough to run the microwave.
