The one that is solid, like a block of cheddar is not the one you want. The correct one is white, crumbly and dry. The brand that is most common in the US is Friendship. I know the book is older andfrom the east coast so I was wondering if there is another name forthe stuff or a way to mail order or even make it at home. In Southern California, we have Gelsons' markets, but I just checked and they don't have NorCal locations. They stock the Friendship Dairies DCCC but they call it " hoop cheese. " You might try specialty groceries that carry a lot of different cheeses - they might be able to order it for you. As mentioned, the only way to know it's the right stuff is either the packaging or by seeing the cheese itself, which is dry and crumbly. Although it's called for in a lot of the BTVC recipes and for the intro, you can also substitute yogurt that has been well-drained (or " dripped " ) for recipes, and if you can't find it, just omit that from the intro diet. I personally don't like it, but I never cared much for cottage cheese pre-SCD. I do use it on occasion for some recipes but for the most part, have just used regular well-dripped yogurt. And just in case you're thinking about it ... no, you can't rinse off regular cottage cheese. :-) I don't think it's critical for success on the diet as long as you are eating foods that are easy for your body to digest. If you haven't seen it, you might find the " stages " list on the Pecanbread site to be helpful as a guideline for starting out (http://www.pecanbread.com/new/scdfoods1.html#beyond). Although geared towards parents with children on SCD, the basic guidelines are useful for anyone starting the diet. Best of luck and feel free to ask questions!
