With honey, I limited it to about 1-2 TBS a day and worked up from there a little at a time. You can try it and keep a journal of how you react to it. I couldn't find DCCC either. I tried cheddar about 3 or 4 days into the diet and reacted badly. Tried again about 2 weeks and reacted again. So I decided to give colby/jack a try and I didn't react to it. Also, Haverti cheese was easy on my digestion at first. Just remember to only try 1 new thing at a time and wait at least 3 days between introduction. It is a slow process but it really really pays off!!! I'm not sure about the gelatin. Could you provide a link to the ingredients or the product to which you are referring?
