Shonda, The only dumb question is the one you don't ask! Yes, most jerky is made with raw meat, and it " slow cooks " in the dehydrator at 150F. I still remember the time I was defrosting a package of burger meat in the Excalibur and forgot it... and came back to find it was not only defrosted, it was cooked all the way through! Well-done beef is supposed to be around 170, so if you are concerned about raw meat, you could pop the finished jerky on a tray into the oven for a little while on a higher temperature. So then it ends up partially if not fully cooked in the dehydrator. since it is thin sliced then it would probably cook all the way thru if you cooked that meat just thawing it. That's great. Didn't know you could use it to thaw meat that way. Just another great reason to get one for my birthday -- smile! I'm getting mine soon so I'm getting so excited about it. Oh, and what is the shelf life of jerky, even if it is raw? Off topic: How was your music festival thingie Marilyn? Hope you had a great time!
