Excalibur dehydrator questions

My yogurt maker has died and I need to replace it. After hearing many

of you talk about using a dehydrator to make yogurt, I am considering

purchasing that instead of another yogurt maker. My first question is

what size would best suit this purpose - the 9 tray or the 5 tray?

Second question and most important, how do you make yogurt in a

dehydrator? Do you take the trays out and place the yogurt jars in the

machine?
