Zucchini chips are easy, Peel zucchini. Slice into coins or lasagna-style

chips, lay out on dehydrator trays. Place tray over a piece of parchment

paper and salt the zucchini lightly. Allow to sit for half and hour or so

in order for the salt to draw the liquid to the surface. Dehydrate on the

highest setting until crispy. Let cool a bit, then store in air-tight

containers. If humidity is high, they may get slightly rubbery after a

bit -- you can re-crisp them in the oven or dehydrator at 150F.

For jerky, get eye of round which is sliced wafer thin, like prosciutto.

Lay out on dehydrator trays. Salt and pepper lightly. (You can use other

seasonings if tolerated -- powder spices together with some salt and

sprinkle it on. Yes, I do have recipes.) Dehydrate on meat setting until

leathery.

Hi Misty,

I got the nine tray WITH the timer (Lucy's doesn't have the one with

the timer so I purchased it from the Manufacturer directly- plus they

offer some " free " packages until the end of the month included in the

dehydrator price like some free non stick sheets and an extended 10

year warrenty also some spices but I opted for the one with the sheets)

I decided to spend more money on the one with the timer because as it

is I always used to forget about my yogurt and just leave it in the

machine. I don't know how many batches I threw out.

I also am planning to make myself food snacks for when I am out of the

house as I only eat food that I prepare, I do not eat out whatsoever.

Works for me.

Thanks for the reply. Do you find it big and bulky? I have no extra

counter space in my less than 1000 SQ Ft house. Actually, I only have

about 1.5 ft of counter on each side of my sink. I'm just so worried

that if I buy the big one I won't use it like I should because I

won't have room for it.

There are only 3 places I go to eat out. I only eat my sister's and

really good friend's house because they understand what I can and

can't have and go through extreme measures to cook a SCD compliant

meal for me. I'm so tired of eating boiled eggs everywhere I go it

would be nice to be able to have some ready made dried food I could

grab and go with.

Hi Misty,

I don't have one yet...hopefully someday....but I did want to mention, it doesn't necessarily have to sit on the kitchen cabinet. You could put it on the kitchen table, a coffee table, end table, etc.

I thought I had remembered you saying you live in a small NYC

apartment before when we were discussing appliances and space. My

house is 3 bedroom but 1 bedroom is mine, 1 is my little girl's and

the other is the playroom. I do have a very small pantry/laundry room

I might be able to put it in. I also might be able to sit it atop my

washer while in use. It's pretty sturdy. I just don't see me needing

something so big, though, I never though I'd need anything bigger

than my Eurocuisine yogurt maker that only makes 7, 7oz jars. I get

paid next week. By then I'll have made my decision.

Luckily, my family and friends (which I consider family) saw the

torture I was going through and after a month on the diet and off all

meds, they were 100% supportive. My sister saw the bulk of my agony

and was so happy when I found SCD because she saw the meds weren't

working and understood I couldn't afford an injection that may or may

not work. And, the doc wasn't giving me enough pain meds so I was

buying them illegally to make up for them. I have an addictive

personality and only took them after I was in agony for at least an

hour because I didn't want to become TOO dependent.

People I meet that didn't know me before the diet look at me crazy

and wonder how I can live w/o eating the SAD. Other's say, oh you are

so small I should be on that diet too. I tell them that it is a large

commitment and the ONLY reason I'm able to stick to it is because I

know the pain regular food will cause me. I also tell them how

healthy I feel as compared to a year ago but let them know that the

restrictions are great if you have absolutely no problem with the

food it will be hard to stick to. I don't feel restricted at all

though. I eat what I want when I want and I rarely crave illegals

anymore. I've come to realize this is my life now and it makes me

happy that I (little ole me) am healing myself.

Thanks so much for chiming in and giving me your opinion as it is

very valued.

My fault really as I should of expressed my intention and needs in a

much harsher and not be such a pushover. Today, I am doing so much

better that some family members have been supportive. Still, I need

to be careful of cross contamination.

I totally understand. Were you confused about the 9 tray vs the 5

tray or is it the extra cash for the timer?

I guess it depends on how much you think you will use it and how much

food you would like to make at one time??

I have a hard time remembering so the Timer was a no brainer- Marilyn

and Baden sold me on that one.. Marilyn said and I quote in refrence

to the timer " Ohh the possibilities " and that was like a no brainer

for my situation.

It's hard for me to constantly prep- so I plan to get a vacuum sealer

(the one I had wasn't great) and I want to be able to make large

batches and not constantly need to make stufff although I hear the

little voice creeping up and saying " yeah.. like try that on SCD " LOL.

So that was my reasoning for the 9 tray.

It seems like a really beyond comfortable and even large size.

So invaluable that you have that kind of support. Bless your sister

and cherish that one.

It's hard to believe how much medicine costs. I did not have health

insurance for many years and that is why some of my health issues got

so friggen bad..

I won't even go into the emotional scarring that I have experienced

with *some* family members over the diet.

Luckily, the ones that mean most to me are very supportive and are so

happy I feel confident and hopeful about my health- the first time in

18 years. Bless this diet and Elaine.

I have been accused of being an anti-social misfit due to this diet..

Makes me laugh and kick my shoes off- because it's like CD and gut

disease makes us want to be so darn social to begin with. So

obviously my baseline was way up there. LOL.

So well said Misty.. I feel the exact same way..

Even my crazy junky like food nightmares are in the past.

I wish there was some way you could hop on over to my house to check

the dehydrator out before you make such an expense.

The manufacturer has some specials going on until the end of the

month- maybe you can ask about the return policy as well?
