X- Post Hidden Starches in Meats

I was concerned about Trader Joe's " Natural " chicken because it said it

contained up to 3% retained water. I contacted the company and am

sharing their response, as they appear to be safe:

Dear Kim:

Thank you for your feedback and inquiry. Our fresh and frozen meats do

not contain any starches. The water retention occurs because they are

briefly soaked in hot water to aid in removal of their feathers. We

hope this is helpful.
