Guest guest Posted January 17, 2009 Report Share Posted January 17, 2009 I always put my yogurt from the yogurt maker into the fridge for 8 to 12 hours (overnight) before I dripped it. The yogurt completes it's coagulation process by chilling or at least resting for a while at cooler temperatures, even if you don't put it in the fridge. A lot of the water is bonded/absorbed during the resting/chilling process. There's nothing wrong about putting yogurt to drip immediately after taking it out of the yogurt maker. It will still work as a probiotic. But you won't have much yogurt left after dripping when it starts off warm and not as coagulated. Kim M.
