Kale Chips (as already suggested) Beef Stew Cauliflower Bake (don't add DCCC) http://www.scdrecipe.com/recipes-casserole/carols-cauliflower-bake/ or http://tinyurl.com/a8tves Eggplant Bake with or without beef (my recipe) 4 medium eggplants cut up chunky with skins on 4 tomatoes diced, squeezing the juice out 1/2 cup both chopped basil and orgeno 1 large onion diced 4 - 6 cloves garlic minced (or to taste) Salt and Pepper 1 pound ground beef Sautee (beef if using), onion and garlic in a little oil until soft (or until beef is done), add tomatoes and cook 15 minutes. Add most of the basil and oregeno and salt and pepper to taste. Cook 5 more minutes to incorporate flavors and turn off heat. Arrange eggplant in a large baking dish, sprinkle with salt and pepper, add remaining basil and orgeno. Toss well to coat. (You can salt the eggplant 1 hour ahead of time in a collander to remove some of the excess water.) Pour tomato mixture over the top and cook at 350, cover with foil and cook for 1 hour.
