RE: mixing in high carb foods at meals?

I was wondering about eating foods in combination with other foods. If I

were to eat something high carb, is it better to eat it at a meal with other

food? Does it make any difference?

If I eat 1/2 of a potato I make sure I eat a steak and salad with it. The

potato gets absorbed in the salad and steak and it sneaks right through

without raising my sugar too much.

It doesn't mean a thing how you combine carbs-a carb is a carb.

The hyper complex carbs such as beans are best in reducing the incidence of

hyperglycemia.

That is what I do, Maralee! If I eat a potato I make sure I have meat

and a salad with it. It doesn't raise my bs too much. You have to test

your bs and then eat the high carb food with a lot of low or no carb

foods and then test again in an hour and then two hours and see what it

does to you bs.

Some people report that eating fat with the carbs will slow the

absorption of the carbs. Others say not. YMMV.

No, a carb is not a carb is not a carb. (With apologies to Gertrude Stein.)

Many people find that the same numerical amount of carbs taken in different

forms will affect their blood sugar differently. For example, for me I can eat

parsnips but not potatoes; the former hardly raise my BS at all, the latter

rockets it and keeps it up for a long time. Other people report the reverse.

Same with rice vs. wheat; rice will send my BS up and keep it up, wheat sends it

up a little, but it doesn't stay up. Some people can eat pasta, but not bread,

or vice versa. (Why this is so, I can't figure out as they are the same

thing--flour, oil, egg, and water.)

For some it seems that something with fat in it will " slow " the absorption

of carbs. Depends on the carbs for me... But I have noticed that it works

most of the time.

Maralee, White russet potaoes raise blood suagr levels faster with us

diabetics. Try Yukon gold or even red potatoes.

I was told yesterday by my diabetes practitioner that in order to help with

things like beets and potatoes to have something with vinegar either before

it or by putting vinegar in it, like pickled beets or potato salad. YMMV
