Hi Sue, I eat white potatoes a couple times a week and never do they cause my bg's to go up. Yes, you will have a high peak with JUST a potato but not when you combine it with no carbs foods. Winifred It just delays the peak, you will still spike hours later right? If I eat 1/2 of a potato I make sure I eat a steak > and salad with it. I can eat 1/2 of a small potatoe along with a salad (no dressing) and a steak. Though I do have a " delayed " spike; my blood sugar " does " spike regardless of what I eat with the potatoe. Believe me, I've tried everything to be able to eat potatoes. Guess its my Irish half that can't seem to resist them. Tonight my hubby and I went out for dinner...I had 1/3 or more of the appetizer...fried and breaded onion strips...then a big mushroom swiss burger with bun, and at least half of the fries. Then I had several low carb reeses mini cups. My BG now, 2 hours later, is 159. So it still needs to keep coming down, of course; but I don't think that's too bad. Even people without diabetes is going to get high readings sometimes. The main point is that you realize that your bg's need to be lower. There are some people that would love to see readings that you have. I would have had very little of the appetizer - a big mushroom swiss burger (without the bun) and a salad (no French fries - or maybe four at the most). I never want my bs to go above 140 even when I test in one hour. Any large spike is asking for trouble. That is just my opinion and what I do. Most recipies calling for potatoes will work with turnips, and many people find that turnips don't make the BS soar the way potatoes do. Ditto for parsnips and rutabagas.
