Today's catch

Here's some pictures of Ronnie and today's catch. Also 2 of him and last night. He was trying to talk on the phone and was trying to watch TV. LOL

Still learning the new camera but it sure takes good pictures. The ones last night would have been better if some dummy knew how to use the flash hehehe

Yeah! He's threatening to do it for Christmas dinner. Hams here are upwards of $40 this year!!!! ACK!

Damn....Tell him to go wild pig hunting...LOL....The store out here over bought hams and turkeys for thanksgiving, so they let their employees have the turkeys for $5 and hams for $10 (Nice spiral hams).....My dil's neighbor got us each one, so we have that....

LOL! Of course we don't fish at this time of year.

We have some venison from a doe his brother got, but so far he hasn't seen any the few times he's able to get out.

I made two small tenderloins from the venison the other night and it was fantastic! Actually a really simple recipe that you could do with beef tenderloins as well, if you don't mind hormones and antibiotics in your food, LOL. (Or paying extra for the organic)

Anyway: put a couple of tablespoons (more or less depending on the size of your loin and the pan size) and a little bit of butter in a pan and get it very hot. The reason you use the little bit of butter is for flavor, but you can't use much since it has such a low smoke point. Using tongs sear all sides of the loin---just briefly until the side is lightly browned, as fast as five seconds on each side if the pan is properly hot. Then stick it pan and all into the oven--preheated at 375--for about ten minutes. This is for a loin that is about 2-3 inches in diameter, and you don't want to overcook, but if you like it more well done add a little time. I make just a small cut in the top to check it when I take it out of the oven. Remove from the oven, and move the meat to a plate to rest. Don't cut it right away or you will lose all the juices--they need to reabsorb after cooking. While the meat is resting (about ten minutes), return the pan to the stove top and deglaze the pan using a small amount of juice, wine or whatever--you can use a variety of things and the taste will vary somewhat. I used cranberry juice since I was having cranberry relish on the side. Making sure to use the spatula to scrape up the brown bits into the sauce, and reduce the sauce until it is whatever thickness you like.

Plate the loin and spoon some of the sauce over each one.

I just did a one inch thick one for each of us, but if you're doing a whole loin you would do it the same, timing and all because it is still the same thickness. In other words in about a half hour you can feed a bunch of people a really fancy meal that's delicious.

We had the loin, cranberry relish and corn muffins. It was soooo good.

BTW--if you think you don't like venison, but you do like beef there are a few things that make a big difference in the taste.

First of all whoever gets the deer needs to immediately remove the tarsal gland from the inner hind legs. Many, many hunters don't know this and if left on once the deer is killed the meat will taste gamey. Also, you have to gut it immediately, in the field, but most hunters know this.

Then--DO NOT overcook it. Alot of people do this and it makes it gamey and with the texture of leather, when it should be tender and delicious.

And we eat mostly game (I don't eat small game, but that's because of a childhood full of cleaning the stuff, LOL) for several reasons.

There is an overabundance of deer--I know they're pretty, but up here they are like freakin' rats.

They have very little fat, no antibiotics or hormones, and are much healthier than farm raised meat as a result. This applies to wild game, and not to farm-raised unless it is certified organic.

Oh--we use my husband's Aunt's recipe, and boy is it good. You have to soak it overnight, but it is wonderful.
