I don't know why I never thought of this!!!! I'm going to the store

tomorrow and I'm going to make up a bunch of different lettucewiches to

keep in the fridge. Does the lettuce get soggy or does it keep for a

couple of days wrapped around stuff? I think the hardest thing about lc

for me is limited ways to eat while driving!!! I spend a lot of time on the

road commute and travelling to shows and sometimes it's the only time I

have available to eat something. I've tried to make Atkin's crepes with

the pancake mix but they were not at all " wrapable " I don't think I did it

right. And even the thinnest flour tortillas have a ton of carbs in them

and I'm afraid I'll start itching again if I add regular flour back into my

diet. Lately I've been relying on Atkins bars and string cheese for mobile

meals, this is a great idea!!! Thank you so much Norma!!

I love creamed Spinach and I made some the other day with just butter and

cream to keep LC, but it was runny. Is there a lc alternative to cornstarch

that you can use to " thicken " a creamed vegetable? I looked up the

cornstarch on the website to check for carbs and it has like 10gm per

tablespoon so that's not worth it, I'd rather drink my veggies!!:)

Lettuce

Take apart Romaine and wash it if it needs it and put paper towel on the bottom of a plastic container and lay the leaves in there. Maybe another layer of paper towel too. It really keeps fresher this way. I was watching a show on TV and it said to wrap alot of your veggies in paper towels to keep them fresher. It absorbs the moisture instead of attacking the veggies.

How about putting some cheese in it? That's how Boston Market makes theirs and it is delicious.

Sharyl,

something that is pretty good for sandwiches is an egg wrap........... if you

take a good telflon frypan, and one that is sandwich size, and butter or oil

it well and put a thin coat of the eggs in it and let it cook slowly till it

is done, or you can cook a big pan of it in the oven, I use a glass dish, and

then you can cut it up for several things, you can make a square sandwich

wrap, I also use the eggs to make noodles, I slice the eggs very thin and put

them in a broth with veggies........ I think these might hold up better thanb

the lettuce as they won't get soggy. HTH Suebee
