Guest guest Posted April 26, 2004 Report Share Posted April 26, 2004 This can be made as much or as little as you need, but it's one of my favorites and it's easy:Meat, Rice and Cheese Casserole 1lb meat 2 cups white rice 5 slices Velveeta cheese 1 can stewed tomatoes Start boiling the water for the rice. While you are doing this, brown the meat. When the rice and meat are done, pour the rice over the meat. Over the rice pour the stewed tomatoes, saving the juice. Lay your Velveeta cheese on top of the tomatoes(slices off the loaf work better than the actual slices). Pour the juice overtop of the cheese and cover til the cheese is melted. Voila'! A yummy dinner with enough for leftovers. This is also good, requires a couple of pans BBQ chicken 4 breasts or thighs of chicken, stewed 1-2 cans of tomato soup 1 medium onion sweet relish brown sugar vinegar Depending on how sweet or tart you want the sauce, you can vary the recipe. If you're not big on onion, you can also use onion powder which also works. Same with brown sugar, if you don't have it syrup also works. It's basically trial and error. Anyways, combine the soup and other ingredients in a large pan and serve with the chicken, white rice and a green veggie of your choice, we usually use green beans. The idea is to pour the sauce over the rice and chicken. I like to make a little extra sauce because there never seems to be enough...that's why I said 1-2 cans of soup. Chicken Enchiladas 4 chicken breasts or thighs stewed and off the bone 1 pt sour cream 1 family size or two regular size 's cream of chicken soup 1 medium tomato, diced chiles(i usually leave these out) 10 of the smallest size tortillas 1 pkg cheddar cheese Combine everything in a bowl but the cheese. Spoon some of the mixture into each tortilla, folding it like an enchilada(i usually dab a little bit of the mixture on the inside flap to keep it down til the end), laying them in a 11x9 inch dish. Make sure you don't use all of the mixture. When you have 10 enchiladas done, spoon the remaining mixture on top of the enchiladas and top it with the cheese. Pop it in the oven at 325 until the cheese is melted, about a half an hour or so. One of our favorites! Enjoy! I am now an independent beauty consultant with Kay.
