I use the almond flour but was just giving you a heads up to watch carefully when you cook with it as it browns so much quicker than wheat flour or bread crumbs. Carol F. (aka coconut butter) is great...... does not have a strong taste and stands up well to high heat (nutrients are undamaged by heat). I buy Spectrum brand refined coconut oil at Wild Oats. Another really good one is from Omega Nutrition www.omeganutrition.com . Coconut oil also has anti-viral, anti-fungal properties.
