Hi Abby,

Use almond butter instead of almond flour to make the bread.

The cashew butter muffins (recipe on www.pecanbread.com) are really light,

white, tender and " bready " , like real bread. You might give them a try.

The cake recipe I posted last week has the same fluffy texture

that the cashew butter muffins have.

You could try making it and seeing if your kids like it.

I have tried it using diced, peeled zucchini and it turned out really

tasty. I made it using carrots and it wasn't as good. The carrot

version needs some tweaks. :)

do you just use equal amount almond butter as you would flour? I've

not found an almond butter that didn't say it was made in a factor

with soy nuts, which has bothered me, afraid of a soy reaction. i

know chances are small, but could you tell me what almond butter you

use?
