I talked to someone else today that just had her last two batches of cow yogurt fail.... after having made many successful batches prior. She hadn't changed anything. The only thing I could think of was that the weather had been very warm....... so it's possible that the temperature got too high. I think I have read before that most of the yogurt makers work best when the surrounding air temperature is within " normal " controlled temp range....... something like between 65 and 85. I can't find my own Yogourmet instruction book or I'd look through to see what it says. Anyway, just a thought. Patti, mom to Katera Goat Yogurt Problems???!! I just had my second failure in a week with goat yogurt! Its coming out still mostly liquid. Smells " sour " like yogurt, and the batch today had some solid-ish parts, but definitely not right. I used my Yogourmet yogurt maker (which has been used regularly for a year), Custom Probiotics starter - half a scoop last week, this week I used about 3/4 scoop, and two quarts of goat milk. I've used all these things before, so I just can't figure it out. I made a batch of cow yogurt in between the two goat failures, using same starter and same machine, and it came out fine. I've been making goat yogurt for a few months now, using this brand of milk (Oak Knoll, pasturized). Never had this problem till the last two batches. I do usually make just one quart of goat yogurt, but I think I made 2 quarts once before. Any ideas?? Has anyone had this happen - just suddenly it doesn't " work " sometimes? Help! It sounds like yours - it just did not take right and was really runny and I had little left after dripping. Guest guest Posted August 9, 2004 Report Share Posted August 9, 2004 Hi Sue, I sometimes have these problems during the summer if the temperature gets too high or if it's especially humid. Another thing is if the yogurt maker gets knocked or jostled while it is setting up. Another possibility: If you let the yogurt to cool down for a very long period (like overnight) that may cause some problems. You may get other bacteria competing with the Lactic acid bacteria cultures that you have added. But that only happens if you don't use sterile equipment or like I mentioned leaving the milk to cool for a very long period. After you finish the incubation time of 24 hours are you letting it set for about 5-8 hours? This may make some difference. Sometimes it looks liquidy right after the 24 hours but will set up after it has cooled. I have had this happen when I make larger amounts (2L or 2 quarts).
