RE: induction buddies.....Day 1

Doing well here! Have a great low carb breakfast with

a couple fried eggs!

Still drinking though.....

Thanks for asking! Day 1 is going fairly well! I've been able to stay low

carb today (so far~so good!!!!)....breakfast was 2 thin sliced pork chops

fried in butter, lunch was Burger King whopper with cheese minus the ketchup

and bun....dinner tonight will be a t-bone steak a few sauteed mushrooms and

a biiiiiiig salad-i boiled some eggs that i'll chop up and put in there, some

broccoli crowns, some homemade bacon bits, topped with bleu cheese dressing

mmmmm!!!

I'm having a VERY tough time right now (as i have been the last 18 hours)

last night i had a quarter of a peice of corn on the cob and got a peice

stuck in my bottom teeth, with my bottom teeth being as crooked as they are i

CANNOT get it out...i've used floss, toothbrush, toothpick....everything i

could think of, i even tried to use my tongue to move it around so much that

i've got the tip of my tongue extremely sore and red....i picked at it for 3

hours last night....does getting something stuck in your teeth bother you as

much as it does me! grrrrr To no avail...although i did get my gums

terribly irritated, swollen and bleeding...and SORE...i'm trying to leave it

alone.....BUT!!! Its driving me nuts grrrrrr Guess its time to see the

dentist :(

So, besides that....today is going as well as it can be!

You got that right, Terry! My DH said to me last night " guess we won't be

having corn on the cob anymore, huh " ....How right he is!!! What a sweet

hubby though...he had me lie on the bed and open my mouth real wide, he had

a flashlight in one hand and a probe thingy (just like what the dentist uses,

the little metal curved hooky-thing....he's had it from his days of being a

pressman-used it to clean the teeth on the presses, etc...was a new one still

in the sealed wrapper) in the other hand and was trying to get at it.....to

no avail....atleast he tried! What a sweetie!!!

Sherry-who has vowed to never eat another peice of corn on the cob!

GRRRRR!!!!!!!!

Things started well today, have been drinking lots and lots of water

and had a cheese omelette for lunch.

I'm actually going to be away until next monday as am going into

hospital tomorrow. Hopefully the food won't be too carby!!

so far so good... I had eggs and cheese and water for breakfast... now I am trying to find something for lunch... We will have chicken breast and green beans for dinner.. I need to go to the store... thank for asking..

Doing fine here. 3 slices bacon and 3 scrambled eggs for breakfast.

Not lunch time yet, but my plan is salad with leftover chicken cut up

and mixed in, maybe a hardboiled egg, too.

I guess those carbs have way more drawbacks than even we suspected, huh, Sherry? What a way to find out it wasn't worth it! Even for just a few tiny corn carbs.

Phased induction, what a jolly good idea ;)

For breakfast I had steak and salad

I just started a beef stewesque thing which has gone

horribly wrong but with all food that has gone horribly

wrong - a nights simmering and all is eadable. [0]

I used Fromage Frais to give it some thickness (instead

of cornflour) which is what went horribly wrong. Back

to the drawing board with that idea I feel. Cream next time

I think.

This lunch i'm going to have an omlette of some description

with muchrooms and cheese. I am unsure what to use instead of

milk with the eggs to make the omlette. Water? Fromage

Frais *grin*.

I don;t know whats happening this evening - either the beefish

thing or salmon depending on how brave I am :)

Can I join in too? I've been on induction level carbs for 3 weeks, and I'm

still trying to keep going and keep it interesting.

Today for breakfast I had:

1 egg crepe (1 egg and a touch of cream made into a crepe) wrapped around a

filling of 2 ounces of cream cheese, 1 egg, 1 packet of splenda and a touch of

maple extract.

Lunch:

Leftover grilled chicken breast and salad

Dinner:

Hmmm, I'm not sure yet. Possibly grilled steak or hamburger. Leftover

cauliflower casserole and a salad.

Ate mostly eggs and water on Tuesday. Today I should be feeling better and

plan on doing some cooking. I'll probably bake some chicken breasts and

Atkins rolls so I have something handy for the next couple of days.

Low carb thickener agents include

1. Vegetable gums - xanthum, guar, arabic. locus bean, carregeenan ad

others. One or more of these should be available at health food

stores, if nowhere else. They have slightly different characteristics

and uses - some are better with cold liquids, some don't work if pH

is too low, etc. A tiny amount of the correct gums will thicken

almost anything, without added flavor or carbs, since they are

essentially all fiber.

2. Egg yolks - used in cream soups, puddings and the like. Added at

the end of cooking - you can NOT boil the liquid, or you get

scrambled eggs. 2-4 yolks will thicken 1 pint of liquid. Whisk egg

yolks until well blended, add the hot (not boiling) liquid a little

at a time to warm the yolks. Then add to the soup pot, whisking

briskly :). Can also be used in combination with cream, for

additional smoothness and thickening.

3. Puree - mostly for veggie soups/stews - puree part of the soup and

add back to the pot - instant " thick " .

4. Reduction - boil the liquid down until thick enough. Watch the

seasonings - they get *very* instense on reduction. Can also be

combined with additions of tomato paste, cream or sour cream for

flavor and additional thickness.

Glad to hear that you " re joining sorry your tummy is upset but, make

sure to eat the most important meal of the day....breakfast in fact

at least 3 meals a day and actually many smaller ones are better

glad induction is going well but, that corn eeer. well, remember that

those carbs are bad but, i guess this is a more physical reminder.

glad induction is going well for you I use either nothing in the

eggs, water, or heavy cream depends on the day, mood, what is in the

fridge and carb counts for the day. :)

Oh that could be quite scarey on me indeed! lol I have about 100 lbs

to still lose......hmmmm i will have to take a rain check on that and

get back to you. :)HMMM I know. I will! In my backyard! lol So when

will you be here? *grins*
