Hi Sheila,

Thanks for posting this. I mistakenly wrote in a reply a short while

ago that it did have bifidobacterium in it. Guess I remembered wrong

when I previously researched it. Sorry for any confusion, /anyone.

In any case, it's not legal, right?

Probiotic Strains in White Egret Farm Yogurts

We do not add any Streptococcus thermophilus or Bifidobacterium species

to

the yogurt culture. Those two groups of organisms have been of concern

to

certain groups of people. We do add Lactobacillus delbrueckii, and

Lactobacillus delbrueckii subspecies, including lactis, bulgaricus, and

leichmanii. For the very interested, several probiotics that once stood

alone as independent species have now been incorporated into the species

delbrueckii. "

Elaine recommends that we use yogurt starter that includes at least both

S.

thermophilus & L. bulgaricus. It is okay if it also includes L.

acidophilus. This yogurt includes extra strains which she has not

recommended.
