I don't cook much, but when I did, I used a specific series of cook books - I happened to find one today - for 'side dishes', and thought I'd see if there were some adaptable to LC. Here are a few recipes: (nothing really 'Israeli' about them apart from the person who wrote the cook book being Israeli). Vered AVOCADO SLICES CREAMED IN PARMESAN 4-5 servings. 2 large ripe avocadoes (700 gram) one small onion finely chopped 1 heaping tablespoonful (T) of butter 1 T oil 2 cloves crushed garlic 1/2 cup heavy cream salt, white pepper a pinch of ground nutmeg a pinch of sweet paprika 2-3 T chopped parsley 1/2 cup of grated parmesan cheese 1. Peel avocado and slice. Arrange slices in buttered ovenware. 2. Melt butter and oil in small pan, fry onion and garlic for few minutes. 3. Add cream and parsley. Add salt, white pepper, nutmeg and paprika, bring to boil. 4. pour sauce over avocado slices, sprinkle parmesan over and put in oven for a few minutes, till cheese melts. Serve immediately, while hot. Longer baking of avocado may turn it bitter and inedible. CELERY ROOT IN OLIVE OIL AND PARSLEY 4 large celery roots 4 T olive oil 5 T regular oil salt, pepper juice of 2 lemons chopped parsley (garnish) 1. Peel celery roots and cube. Put both types of oil in pan and fry celery cubes for about 5 mins. 2. Add some water to cover the celery, and bring to boil. Add salt, pepper and lemon juice. 3. Cook on low fire, till the celery cubes soften and the sauce is reduced almost completely, and only a bit of the oil is left at the bottom. 4. Serve hot or cold, garnished with chopped parsley. ZUCCHINI CHEESE AND NUT PATTIES This sounds good - possibly use crushed pork rinds for bread crumbs and soy /almond flour instead of regular flour: 1 kg (2.2 lb) zucchini One large onion, chopped and fried 100 gr Kaschkaval (sharp yellow cheese), grated 100 gr nuts, coarsly chopped 3 T of bread crumbs (crushed pork rinds?) 3 T flour (almond/soy flour?) 3-4 eggs salt pepper 3 T chopped parsley 3 T chopped dill (I hope I translated correctly - it's what frequently comes with garlic in cream cheese... ) frying oil 1. Finely grate zucchini. Spread salt and leave in coriander for an hour. 2. Squeeze zucchinis in hands and put in medium sized bowl. 3. Add rest of ingredients, mix well. 4.
