Guest guest Posted July 14, 2004 Report Share Posted July 14, 2004 I have used the Eggless Almond Flour Bread that appears on the pecan bread website http://www.pecanbread.com/recipes.html I modified it slightly (borrowing Jody's idea from the " mixed nut pancake/waffle " recipe). Instead of putting it in an 8x8 pan, I spread out the batter evenly on a jelly roll pan and shorten the cooking time to about 8-10 minutes (at 350 F). Once it cools, I cut it into larger bread-size squares, take what I need, and then put the leftovers on wax paper, and freeze it for future use. And it reheats great in a toaster oven. I can't believe it's eggless and honey-less -- it tastes great and my 3 year-old loves it! Guest guest Posted July 14, 2004 Report Share Posted July 14, 2004 I made some of the nut muffins in the BTVC yesterday, and instead of eggs, I put in pureed peach. They were delicious. I used coconut butter where it called for butter, too. My son like the muffins and he eats them with meals at lunch just like he would a roll or bread. He calls them cupcakes. I make them with almond flour now, but started out with just pecan flour. He seems to be okay with almond now. He is healing, praise God! Guest guest Posted July 14, 2004 Report Share Posted July 14, 2004 Recently we tried it with Hazlenut (filbert) flour and it didn't work. I think the flour was too oily and the bread never seemed to set up. So, we're sticking with Almond flour. You could try pecan flour but it seems that it may be too oily as well.
