I would try using a little less than 1/4 cup of the batter and see if it will work as a pancake. Nut flours require lower temps and longer cooking time when making pancakes. If it doesn't work, I would just put the rest of the batter in the pan as indicated in the recipe. Or try spreading the batter very thin on a parchment paper lined cookie sheet. (This is the method I used to come up with the flat bread.) You can also use pecans (or a mix of pecans and walnuts) instead of almonds, if you are avoiding phenolic foods. Jody mom to -5 and -7 SCD 17 months =============================== EGGLESS ALMOND FLOUR BREAD adapted by Brandee 2 1/2 cups almond flour 2 pears - pureed using food processor 1/4 to 1/3 cup coconut oil 1/4 teaspoon salt 1 teaspoon baking soda Preheat oven to 350F. Put all ingredients into food processor except flour. Process until it takes on a " butter-like " consistency. Add almond flour and mix until blended. Spread some coconut oil all around the bottom of an 8 " x 8 " baking dish. Sprinkle a little almond flour on the bottom. Spread mixture into pan and smooth it out. Bake 30 minutes. When cooled it can be cut into squares if desired. Variations: Add some peanut butter and cinnamon, OR in place of the pearsauce, use pureed acorn squash and a little cinnamon OR pureed carrots and a little cinnamon. (for three months now) Prior to SCD we were gf/cf for two years. Now, I make homemade yogurt with homemade nut milk and it has worked out great!
