Does he like meat?

Saute onions and garlic in oil. Brown one lb. of ground beef, turkey,

pork or chicken.

(At this point I put in chopped up green beans or spinach or carrots or

some of two)

You can leave this out if he doesn't like it. Pour in legal tomato juice

and simmer down.

Eat like chili or on top of spaghetti squash.

Add a few drops of vinegar and the same of honey. A bit of crumbled basil will

heighten the flavor. Conventional recipes include mushrooms, Tobasco (it's

legal) and a dash of chili powder.

Is the sauce thick enough?

If not, try straining it the way we drip the yogurt. That will allow the

water to drip out of it and the sauce will be thicker.

If it's the flavor, try looking at the back of the jar on the kind he

likes and see what is in it. Maybe you are missing the spices he

likes. Oregano, basil, garlic?

You know, my favorite sauces in a jar have some sweetness to them. Most have

corn syrup in them to make them sweeter. So, I bet if you add some honey this

will help. Oregano, basil and parsley are the main italian seasonings in the

sauces, too. Bay leaves flavor really well, too, but they can have a bite so

maybe only one or two while simmering, and removing afterward. That's about all

I can think of. OH and tons of salt - those jar sauces have a ton of salt in

them so this may be needed until he gets used to it, and then you can decrease

each time you make it if you don't want all the salt.

I just know the homemade ketchup I've been making is really yummy, almost like a

marinara and I use honey in it for sweetness. Maybe some red wine vinegar, too?

Or cooking wine? :) Spaghetti is my next cooking project since it's a favorite

of ours, so these are the ideas I plan to implement but haven't done yet. I

have to figure out how to do that spaghetti squash!

Tomato Sauce

I'm having a really hard time making a tomato sauce my son will

eat. The only way he will eat his veggies is if I hide them in

pancakes or top them w/ spaghetti sauce. The homemade kind I am

making just isn't cutting it.

Right now I am mixing tomato juice, tomato's, onions and garlic. I

simmer until it creates a thick sauce. It doesn't taste to bad to

me, but he knows it's not his Newman's Marinara sauce we used to

buy. Any suggestions???

I made this today for you. it was simple and excellent.

3/4 pound minced veal

2 cups tomato juice

6 garlic cloves sliced

1-2 tablespoons olive or sunflower oil

salt and pepper

1/2 teaspoon honey

1 zucchini peeled and sliced into thin strips with vegetable peeler.

Heat a large saucepan, add oil. Saute garlic and add meat. Brown meat turning

often. Add slat and pepper. Add tomato juice and reduce from the boil. Add

zucchini and simmer uncovered until thick and meaty at least one hour.
