I peel it, slice it up and steam it till soft. Seems to turn out nice and

moist.....not stringy.

I cut it up with a crinkle cutter to look like fries, then fry it

in olive oil. Salt immedaitely upon removal from grease. Very

delicious. My little one even enjoys them leftover, they are very

soft left over.

I have such a hard time peeling the butternut squash...it's so hard!

Any tips?

thing. It really makes a huge difference.:) Cut off both ends with a

BIG, sharp knife, trying to waste as little of the squash as

possible. Then hold the squash on a folded towell (and old one that

you won't worry about staining) which will keep it from slipping AND

cushion your knuckles from pounding against the counter top! Peel in

a downward (toward the counter) direction. The skin is tough, I

know.... but once you've cut the ends off, you have a place to

start.... then, the skin itself is actually pretty thin. While a

butternut squash is not the easiest thing in the world to peel,

you'll get faster and better at it with practice and patience. :)
