Guest guest Posted June 24, 2004 Report Share Posted June 24, 2004 Hi (great name!), I tried making the muffins using the various egg replacers on the pecanbread website, but with no success. Finally I decided to make them by simply omitting the eggs, and they turned out fine. They weren't as fluffy as the ones with eggs, but they tasted good, kind of like a moist brownie texture. The baking soda and vinegar seems to help them rise a bit. I think I also cooked them about 20 minutes instead of 10 in order to dry them up a bit. If I could find a substitute, I know he would love the muffins. Any other muffins without eggs would be great to know about as well.
