First yogurt making clarification

Hi,

I have the Donvier yogurt maker and compared their instructions with

peacanbreads web page instructions for goat milk yogurt because the

machined instructions are for cow milk and Im assuming its different.

1. The thermometer the machine does not have numbers on it so IM

assuming I should get one since goat milk is delicate and should not

be over heated? I had to wing it this time by the instructions in the

machine book telling me to wait till the steam starts and small

bubbles would appear on the sides.waht does happen if the goats milk

is overheated? Does it ruin the cultures or the taste?

2.The Peacanbread web instructions call for 1/2 scoop of the yogurt

starter and the machines instructions call for 1-2 full scoops. Why

only use 1/2? I did only use half.Is it because we dont want it that

strong for the kids?

3.The peacanbread web instructions say to make the machine cook for

24 hours. Is there any special reason for this with goats milk? The

machines instructions say 10 hours at least and more for firmness. I

set the timer as long as it would go which was 19 hours.Should I be

resetting it to hit the 24 hour mark when it goes off?

trying to make sure Im understanding things and doing it right. Dont

worry if Im wrong I promise I wont scream and stomp my feet.:-)

well I answered one of my own q's I think. Yogurt is cooked for 24

hours as to deplete the carbs in it. My brain is going to explode/

To answer all of your questions at once... :)

Follow the instructions on either pecanbread.com or Elaine's

website.

The directions that came with your yogurt maker are not for

making SCD yogurt (they are for making regular yogurt).

Jody, I made it the way it said, I just pick things apart. I want to

know the why's etc.
