Gwen,

From the list of foods you gave, I don't see many foods that are

high in carbs. Have you used Fitday.com to make sure that he is

getting enough carbs?

As for the " Just Apricots " , I doubt that they are made from cooked

fruit. So, if you are looking for cooked food items, I think they

would not be a good choice. They are dried, which makes them

even more difficult to digest than raw fruits.

Have you tried crisping some slices of muffins?

Make whatever type of muffins your son likes. Once they are

baked and cooled, slice them in thin slices or cut them into

cubes and place them on a cookie sheet and put them in the

oven on " warm " or the lowest setting your oven has. Check on

them after 30 minutes and keep checking them every 15 minutes

after that until they are the desired crispness.
