I also added 1/4 cup raisins, but those would not be suitable for beginners. It's very yummy. It's disappearing quickly...LOL. And says it's the best cake yet and he wants me to make it for his birthday cake in 2 weeks. You can use dripped yogurt with honey to make a yummy cream cheese frosting. If you cut it into 12 pieces, each piece would have about 200 calories. Cut into 15 pieces, each would have about 160 calories. I have made lots of variations - different nuts, used pears, pineapple, zucchini, less eggs, less honey, etc. and it turns out great. If you do use pears (or something with more water) you either have to squeeze the water out of them or use a little more walnut/nut flour. Thanks for taking the time to share it! I've used zucchini and added raisins which was really yummy too. My boys love ginger and I've added it before as well.
