I made a similar, but low fat recipe based on it. Hope you enjoy this, too! - - * Exported from MasterCook * Cherie's Italian Not-Progresso Zucchini Recipe By :My own recipe Serving Size : 0 Preparation Time :0:00 Categories : Amount Measure Ingredient -- Preparation Method -------- ------------ -------------------------------- 3 fresh zucchinis (not frozen) 3 8 ounce cans Hunt'sTomato Sauce 1 8 ounce can sliced mushrooms, drained 1 large onion (I use yellow or white onions for this) a pinch or two of white pepper 1 tsp " Italian Seasonings " mixture Wash and slice zucchini (as you would slice a cuke). Chop the onion. Put the 3 cans of tomato sauce in a 2-quart saucepan. Add the seasonings and stir well. Add the onions and mushrooms, and stir well again. Add the zucchini and mix well, once more. Cover, leaving a small space so steam can vent out of the pan. Bring to a simmer. Simmer, vented, for about 15 minutes or until zucchini is tender but not mushy. (One cup = 1 WW point) I love this! For lunch, I often take a cup or two and top it with a slice of cheese and nuke it until the cheese melts. Delicious as a side dish, too Served the next day, it tastes even better!
