I don't know of anyone who has succeeded at making pretzels from almond flour. How about frozen bananas with honey drizzled on top? This tastes very much like ice cream and would go very nicely with the peanut butter cake. You can freeze the bananas (no peels), then slice into circles, then refreeze and the serve with pieces of the cake. As for snacks, how about gelatin jigglers cut with cookie cutters to match the theme of the party? You can make several colors of jigglers to make it more festive. You can make gelatin parfaits too. Make this in small clear party cups. Make one color gelatin, pour into cups, let the gelatin set. Spread a thin amount of yogurt on top. Then add another color gelatin and let set. Add another thin layer of yogurt and add one last color of gelatin. You could also add diced fruit to the layers of gelatin. For fun fizzy drinks you can serve pineapple juice mixed with carbonated water. If you are looking for a sandwich type idea, you could make mini pancakes and make very small peanut butter sandwiches. For pizzas, I use pancakes for the crust. Then I put sauce, toppings and cheese. They make nice individual-sized pizzas. I usually use the chicken pancakes and add veggie toppings. I have BTVC and :Lucy's cookbook and nothing has grabbed me for something he would like. I just ordered the frozen yogurt maker from Lucy'sKitchen shop and I am thinking I can try to make " ice cream " but I am anxious about that because he hates the yogurt. So I either need a really good ice cream recipe (that tastes like real ice cream) or some kind of cake with frosting. Although I like the ice cream made from yogurt it does tend to taste a lot like yogurt. If you are able to use strawberries making a frozen strawberry yogurt is pretty tasty. The cakes made with nut butter are pretty good - we all like the pnut butter cake recipe. I have frosted it with many different colors depending on the cake. And at Dan's bday I made a carmel fondue dip and had lots of bananas and cut up apples. All told we went through 5 lbs of bananas and about two pounds of apples and assorted other fruit. Guest guest Posted October 11, 2004 Report Share Posted October 11, 2004 Birthday cake. What I have done is made a layer cake out of the Nut bread recipe. I doubled or tripled the recipes to make sure I had enough for two layers. I pour them in two cake pans. I made jam using fresh fruits and honey. I place the jam in between the two layers. I use the honey frosting in the BTVC book-taste marshmellowy and then I placed cut strawberries on top of it. It is delicious and beautiful but you can always decorate it with stuff you buy at the store...little toys and such depending on the theme. I would recommend refrigerating the honey frosting till the last minute before putting it on the cake. It melts. I suppose you can also color the frosting with food coloring but I have never bothered with that. My kids and a lot of other people who were non gfcf and SCD at a picnic I went to raved about the cake. I also made the legal SCD marshmellows. I also placed almond butter, and dates in a food processor and mixed them up and roll them in nuts and coconut. Gelatin and juice with fruits are great. You can do a veggie or fruit platter and/or make the punch with perrier water and legal juice or smoothies. You can also freeze the smoothies into cups to make a yogurt ice cream kind of thing. It was such a big hit I had to make another batch during the party. Here's the recipe: " Lynda's Famous Caramel Icing " 1 Cup honey 1/2 Cup butter 5 Tbsp yogurt Heat these ingredients to boil stirring frequently -a heavy saucepan is best. Boil for two minutes stirring constantly to ensure it is well blended. After 2 minutes remove from heat. Add 1/2 teaspoon legal vanilla extract 1/2 teaspoon baking soda *When these two ingredients are added it will bubble up. Stir well and let cool slightly before using as icing. When I made this as fondue I put it right into the fondue pot. I have also used it as a topping for cake. I roasted some pecans then threw them into the caramel sauce and drizzled over a peanut butter cake.
