It tends to be " wetter " . So, use just 3/4 of the called-for amount. 1 cup butter = 3/4 cup coconut oil Coconut oil is a semi-solid opaque oil that is purchased in jar resembling mayonnaise jars. We also have a local natural foods chain that carries another brand that I really like from Omega Nutrition. I've bought it off the shelf but you can order through their website, too. www.omeganutrition.com is their main informational site and www.omegahealthstore.com is their online store. It's a very nice quality coconut oil (they have other nutritional oils, too). I think I really like it better than Spectrum's. I now order it from Tropical Traditions on line. See www.tropicaltraditions.com I also get their coconut flakes.
