awesome chicken nuggets

I haven't made fried food in over 6 months. As a rare treat, I

decided to fry up some chicken nuggets and found a fabulous crispy

coating in some cookbook. It is slightly modified from the

cookbooks version.

4 egg yolks

6 tbsps finely grated (almost powder-like) parmigiano reggiano cheese

3 tbsp homemade chicken broth

salt,pepper

mix these ingredients until it becomes a thick batter consistency.

You may want to add more or less of an ingredient to make it the way

you like it.

Coat chicken cubes in this and drop into oil immediately after

coating. Becomes very crispy and has a texture reminiscent of a

wheat battered nugget.

The oil tends to really foam up with this recipe so you have to fish

out the nuggets with tongs by feel sometimes.

WOW! Thanks so much for this; I never thought of using cheese, but

it's a great idea. I may try it out tonite with Romano. Romano is

similar in texture and flavor to parmesan, but is a sheep's milk

cheese - something good for those still staying away from cow products.
