While 3 pounds of carrots IS an incredibly large amount of Vitamin A, the TYPE of Vitamin A might not be toxic. I don't know. The perinatologist who did my amniocentisis assured me that a lot of beta carotene was not a problem; I ate a lot of carrots while I was pregnant. Keeping in mind that my son's autism was diagnosed at Sears Photography Studio, versus the local " schmeckspert " developmental pediatrician who saw him near the same time, and a neurologist in the next state at a famous institution told us the mercury was out of his vaccines by the time he got them, etc., you might want to check with an additional source before taking my local perinatologist's word for it. Guest guest Posted November 7, 2004 Report Share Posted November 7, 2004 I am following this thread with great interest. Before I was diagnosed with celiac disease, I couldn't handle any solid food. I went months like that before I decided that I HAD to get some nutrition....so I began juicing carrots and celery. I would put six or seven carrots, along with four celery stalks in and I drank it twice a day. I immediately began feeling like I would actually live after all, and I also turned very yellow. I read that it was due to my liver detoxing, so I didn't worry about it. (My GI doc thought I was nutty - no surprise there). The yellow color eventually disappeared, but I was still drinking the same amount of carrot/celery juice. That tells me that it isn't too much vitamin A...otherwise I would have continued to be yellow. Anyway, that was three years ago that I began juicing. And I still do it, although not as much. I now juice four carrots, three stalk of celery and will now throw in about a third of cucumber in with it. I drink this probably three, sometimes four times a week (only once a day). Sometimes I will get just a hint of yellow hands and feet. But it only lasts a day, and it is gone. If anyone has any good, documented info on how much vitamin A is too much, I'd love to read it. I've wondered about it, but I certainly don't seem to get any liver problems, and I seem to thrive a lot more when I am consistent with drinking it. So I'd hate to have to stop. Also, I know a mother and a daughter - both have/had cancer. The mom had breast cancer, and healed herself by juicing. The daughter has lymphoma, and I know she is also juicing....I don't know what her outcome will be. So you have to know that this is powerful stuff!!! Guest guest Posted November 8, 2004 Report Share Posted November 8, 2004 Carrots do not actually have true vitamin A in them but only beta carotene (which is a " pro-vitamin " - a precursor to the actual vitamin A (meaning the body converts beta carotene to vitamin A - but not all beta carotene is converted directly to the vitamin A form - there are some other metabolically active forms and only one causes vitamin A toxicity)). Beta carotene is actually the orange pigment which will in fact turn your skin orange but is not normally toxic the way the actual vitamin is. But I'd say work on getting in a greater variety of veggies and cutting down on the carrots anyway just to be safe and to get a better variety of nutrients. I have thought about juicing other veggies to give my body a break from the carrots, but I find that the taste without the carrots is hard to swallow - pun intended! The carrot juice gives it a little bit of a sweet taste to it. Basically, I am getting six or seven carrots a week. That doesn't seem to be too much. I don't eat any whole ones.
