Does anyone have any good bean recipes? Once I get past phase 1, I'd

like to have some vegetarian meals once in a while. I can't use meat

substitutes because of my soy allergy, so I need to rely on beans

and whole grains for vegetarian meals. I'd even be happy to have

some good bean recipes to have as side dishes.

I have this one recipe that I was wondering if anyone knows how I

could make it South Beach friendly. If I take out the ham, how can I

give it flavor?

Red Beans and Rice

2 cups dried red beans

1 quart water

1 pound ham

1 carrot, chopped

1 onion, chopped

1 bay leaf

pepper, to taste

Cooked brown rice

Soak the beans overnight in cold water; drain. Heat the beans in

about 1 quarts of water, add all ingredients, and boil for at least

2 hours.

When beans are tender, mash them up a bit. Serve on boiled brown

rice with meat and vegetables on top.

I think this would be good like it is

without the ham.Maybe add a little evoo

for flavor and chopped tomato would be good.

Yes, beans are on phase 1, but brown rice isn't. The recipe had both

beans and brown rice. I just can't figure how to cook beans so that

they actually taste good and aren't really dry.
