I usually love candied sweet potatoes, no bake cheese cake and ham for Christmas

but this year my menu will be skinless turkey, lowfat suger free cheesecake made

with lowfat cream cheese, SF FF coolwhip, lemon juice and splenda, and a

deviled egg. I will be happy with that. Just remeber the quote on here.

Nothing taste as good as thin looks.

Oh Geez!! Don't remind me of all this. IF I get my surgery when I am

hoping, it will be the week before Thanksgiving. That would put me

still on full liquids at Thanksgiving. Runny mashed potatoes, here I

come...LOL! I figure that will be the only thing I could eat at one

week out, if I'm even that lucky. Do they make sugar free cranberry

sauce? I doubt it.

If not, then it will be the week after. I don't want that because I

drive back to Texas (from Michigan) around the 20th for Christmas with

my friend Bill. We stay with his family for a day or so on the way and

I think it would be challenging to manage food there and on the drive.

Traveling isn't that hard really. I drove around with my family to

New England for two weeks at the end of June. I had fat free mayo and

far free cheese. Never really used much of it though. I ate 's

chili once in a while and would have part of a subway sub. Cheese

sticks, beef jerky and lots of fresh fruit make great snacks. Take a

couple cases of water with you. Maybe get some of those individual

crystal lite flavor packets for them. Staying hydrated will make help

with any hunger and other discomforts (other than having to go to the

restroom).

A lot of the hotels we stayed at had eggs on their free breakfasts.

Having a positive attitude will help with this. Embrace the challenge

of finding good food on the road. There's lots of major cities

between MI and TX. Heck you can even find some interesting healthy

alternatives at mom/pop places in small towns if you look and order

them with no sauces and stuff.

When in Texas have some of that delicious brisket. I'm visiting my

brother in Austin over Thanksgiving this year. We're flying down

though. We're going to drive to Dallas for a day and dip into Mexico

by Laredo for a couple days too.

Hmm you're only going to be a month out of surgery? Maybe the meats

will be a little tough. You might be able to do half of a small chili

though. You should be able to handle some cheese. Eggs were tough for

me, only the yellows, buy you might do okay. Bring some cream and

cottage cheese along. I used a thermoelectric cooler in the car. See

about getting one of those. You could put some pre-made shakes in

there if you're still needing to drink those. They're not all that

cheap I know but so worth it on a long trip. Oh and don't leave them

plugged in for more than maybe 5 hours like I did in DC. Whoops.

Usually around the holidays is when less people get the surgery due to wanting

to be able to enjoy the holiday and the food one last time. I see it now and am

SOOO grateful I will not be focusing on the food as before this year.

I you have a " Cheesecake Factory " near you, they have

a yummy splenda cheesecake. It's a delicious

replacement for pies!!! I ate mashed potatoes the

week after my surgery because I was at a party and it

was the only thing I could eat, it was

glorious....real live food....and I did it without it

being watery or runny...lol

Yeah...well that's a bit too much for this Dutchman to take. I think

I'll just munch on a block of colby or cheedar and call it good. I

don't even like to spend that much when I take my kids out to dinner.

Mike,

I agree, it is expensive. I think I would attempt making one myself first. My

sugar free cake turned out quite nicely, so I think I can make a splenda

cheesecake turn out pretty good too. I love baking and finding dessert recipes

I can try.

Yeah...well that's a bit too much for this Dutchman to take. I think

I'll just munch on a block of colby or cheedar and call it good. I

don't even like to spend that much when I take my kids out to dinner.

So how soon after surgery could you eat SF cheesecake (no crust)? My

friend bought the low carb cookbook by Stella and makes the

most awesome splenda cheesecake. I usually do Thanksgiving at his

house so I could put in a special request.

The only thing I would really miss would be my yummy dressing. I might

make it and have it prior to surgery.

since the Cheesecake Factory SF cheesecake has only 6

carbs and no sugar, I substituted it for yogurt in a

meal. I can only eat about 2 tbs. worth anyway, so I

just figure I am not doing anything awful. I am in

stage III diet.

Thanks for the recipe. I'll give it a try. I had another cheesecake recipe

made with splenda that called for a pine nut crust, but it was much more

complicated than this one. It was delicious and I thought I would try it again.

But, I think I will try this one first.

Re: Holiday Question

This recipe for Splenda sweetened cheesecake is from the Food Network

website. It was on Stella's low carb cooking show. It's a

little more involved than my skill set allows so I get my friend to

make 2 when he makes it.

24 ounces cream cheese, softened

1 cup extra-fine whole milk ricotta cheese (to refine, process in a

food processor for 1 minute)

1/2 cup sour cream

1 1/2 cups sugar substitute (recommended: Splenda)

1/3 cup heavy cream

1 tablespoon no sugar added vanilla extract

1 tablespoon fresh lemon juice

2 eggs

3 egg yolks

Special Equipment: 1 (8-inch) springform cake pan

Preheat oven to 400 degrees F.

Spray the springform pan with nonstick vegetable oil cooking spray.

Set aside. In a shallow roasting pan big enough to fit the cake pan,

pour about 1-inch of water and place it on the center rack of the oven

to preheat.

In the bowl of an electric mixer, beat softened cream cheese, ricotta,

sour cream and sugar substitute on low speed for about 1 minute until

well blended.

In a separate bowl, using a wire whisk, mix heavy cream, vanilla,

lemon juice, eggs, and egg yolks until blended.

Turn the mixer on medium speed, and slowly pour the egg mixture into

the cream cheese mixture. Beat just until blended and then turn off;

be careful not to over-whip.

Pour batter into the greased springform pan. Place pan into the heated

water bath. Bake for 15 minutes, and then lower the oven temperature

to 275 degrees F. Continue baking for 1 1/2 hours, or until top is

light golden brown and cake is pulling away from the sides of the pan.

Turn the oven off when finished cooking and leave the cake in the oven

to cool for 3 more hours. (This will keep the cake nice and tall.)

Then remove cake and refrigerate before serving. Serve chilled.
