You don't have to remove the pecan skins. the almod skins contain an adverse

substance and are hard to digest.

Either is okay to use. Some people may react to the skins in the

unblanched almond butter. I make my own almond butter with blanched

almonds that I buy from the baking section of my grocery store. I

usually have to add a little oil.
