Guest guest Posted May 27, 2005 Report Share Posted May 27, 2005 Very easy, delicious and hardly any calories Take a big bowl of fresh yellow beans, cleaned and snapped, about 4 cups would do. Put them in a big soup pot with 2 cans of beef broth, 2 cans of chicken broth and 2 cans water. Add about 6 carrots sliced into "coins", an onion sliced, about 4 small red potatoes and salt and pepper, season salt, onion salt, garlic salt, dried parsley or I like Monterey steak seasoning for chicken. It already has all the spices in it. Simmer until potatoes are soft but not mushy. Maybe an hour. This is 56 calories a cup. Now you can also fatten it up by adding some mini meatballs. This an old Polish family recipe and what my Mom would do to make the broth thick was to brown a couple of Tablespoons of flour in some butter, adding a little of the broth until you had a thick paste. Then you mix this into the soup and it thickens it and makes it a whitish/grayish color. "Zapraska" is what they called it. Adds about a bazillion calories. This soup is great with some rye bread and butter.
