My hubby makes them homemade, and soon I will be on phase 2 so was seeing if anyone had this so I can join in with everyone! Thanks Reminder: The South Beach Diet is not low-carb. Nor is it low-fat. Heat a large nonstick skillet coated with cooking sprat over medium heat. Oatmeal Pancakes, version 2 1/2 cup old-fashioned oatmeal 1/4 cup low-fat cottage cheese (or tofu) 4 egg whites 1 teaspoon vanilla extract 1/4 teaspoon cinnamon 1/4 teaspoon nutmeg DIRECTIONS: Process the oatmeal, cottage cheese, egg whites, vanilla extract, cinnamon, and nutmeg in a blender until smooth. Spray a nonstick skillet with cooking spray. Add the batter and cook over medium heat until both sides are lightly browned. Whole Wheat Pancakes 1 1/4 cups whole wheat flour 2 teaspoons baking powder 1 Tablespoon sugar substitute 1/2 teaspoon salt 1 egg 1 cup skim milk 2 tablespoons vegetable oil Mix ingredients and pour onto griddle in pancake sized puddles. Apple Pancakes (Dusanka) Ingredients: 1 1/2 cup milk (2% fat) -- 375 ml 1 cup rolled oats -- 250 ml 2 tbsp oil -- 30 ml 2 eggs, beaten 1 tbsp sugar free maple syrup -- 15 ml 1 cup whole wheat flour -- 250 ml 1 tsp baking powder -- 5 ml 1/4 tsp salt -- 1 ml 1/2 tsp cinnamon -- 2 ml pinch of nutmeg 1 grated apple Directions: Mix oats and milk and set aside for 5 minutes (or longer) Add oil, eggs, syrup and blend well. In another bowl, mix flour, baking powder, salt, cinnamon and nutmeg together. Add dry mixture to liquid mixture, add grated apple. Cook in lightly oiled pan using apprx 3 tbsp (50 ml) for each pancake These are quite filling and quite tasty, you can make them without the apple and spices or with mashed banana or grated pear, and vanilla instead of nutmeg and cinnamon.
